Japanese Garlic Beef with Rice

Duck Dry Rice

Hello everyone! Chef Book online today, I’ll introduce you to the popular menu of Ampawa.
I have to tell you that this menu is an original recipe. It’s called dry rice.
If you have been to Ampawa, you must have had the chance to taste a dish called Chicken Dry Rice. Right?
But today, I’ll make something different. It’s Duck Dry rice
Pour a little bit of oil, not too much, because duck meat already contains lots of fat.
Then put the duck meat into the pan.
Don’t put the seasoning right away. You have to wait until the duck meat is cooked well first. If you put all seasoning now, the duck meat might get burned and it won’t look good.
I think the duck meat is quite ready now. I’ll tell you my secret. Instead of galangal, I am using sugar free Gingen ginger powder.
The Ampawa original recipe uses galangal in this menu.
After that, add soy sauce, sugar and pepper powder to make it more tempting.

Hello, Chef Book online. Today we’re going to make a fresh cold drink that is very healthy too.
I call it “Ginger Mocktail”. We got this idea from a Spanish mocktail.
They call it “Mohito” or “Mojito”. When you drink it you will feel very fresh.
It’s very good for summer. But today I will add something to it.
I’ll add a taste of Thai herbs. That herb is “ginger”.
You might be confused about how to make mocktail from ginger. Do you need to cut and mash it?
No, you don’t need too, because we have the best assistant. Gingen instant ginger (sugar free).
You can use it making a nice drink or for cooking as well.
We put ice about 1/3 of a shaker and then add honey.
Squeeze lime/lemon for a sour taste and it got high vitamin C for good health.
Add a little bit of salt and Gingen instant ginger.
Then we put some peppermints and soda drink around half of the shaker
After that close the lid. The technique to shake, we’re not going to put our hands right here,
because the warm temperature from our body will prevent the drink from making ice-flakes.
We must hold on top and the bottom, let our hands touch it as less as we can, then shake it very fast.

Salmon Steak with Ginger Sauce


Hello, Chef Book online today … we’re going to cook salmon steak.
Not an ordinary salmon steak, but a salmon steak with ginger sauce in Japanese style.
It’s very easy, everyone can try it at home.
Today I got a salmon fillet with skin like this, it’s just perfect.

Thai Dry glutinous rice balls ginger flavour

Hello everyone! Chef Book online today is on the Dongzhi Festival (Winter Solstice Festival).
So I am going to make Thai glutinous rice balls, and it’s a new recipe.
I believe some of you might have tried Thai glutinous rice balls in ginger soup once or twice, right? The round-shaped dumpling with black sesame filling, you eat them with hot ginger tea.
For today, I’m going to cook “dry Thai glutinous rice balls ginger flavour”
Boil sweet potato until cooked. Place the cooked sweet potato into a large mixing bowl, mash until smooth.
Add the rice flour, for Thai style we use glutinous rice flour.
Add sweet potato into the bowl, if you want to get better taste, add more potato sweet, and less flour
For this fusion dessert, I combine Thai-style rice balls in coconut milk and Chinese glutinous rice balls with ginger tea.
To make glutinous rice balls in Thai style, we sometimes add taro, carrot or pumpkin.
Today I chose purple sweet potato for this dessert.
I will knead the purple sweet potato with flour until it is nice and well mixed.
Then add water. If you mix water and flour before adding purple sweet potato, the color of the dough will not be smooth and even.
When the mixture is well kneaded in the dough form, we make rice balls from the dough and put them in the boiling water.
I will make each rice ball the same size as what we have in the Chinese glutinous rice balls in ginger tea.
Make sure it is well cooked. If they are ready, they will float to the top of the water.
When the rice balls are ready, soak them in cold water for a moment.
If boiled too long, the rice balls will be too soft.
For seasoning, I will have some sugar.
And add a little of salt.
I am using Gingen ginger powder. It’s sugar free.
Mix all the seasoning.

– All you need is milk, eggs and sugar. These are the only ingredients you need to make caramel puddings at home.

Coconut milk jelly with Ginger

Hello everyone! Chef Book online today, it’s Mother’s Day. So I will make a dessert that you can cook for your mom. It’s Coconut milk jelly with Ginger.

You may be wondering why we put ginger in the dessert. Let me tell you, ginger is one of the herbs that is good for health. 

It helps to prevent against free radical damage and may delay signs of aging, and makes your mom get a good night’s sleep.

Put jelly power into the pot first, then pour some water, and stir it. But don’t turn on the gas stove yet. If you do, the jelly powder will become clumpy.

Then add coconut milk in the pot. Choose the thick coconut milk for this menu.

Then turn on the gas stove, wait until it is a bit hot. If you notice some vapor, it means the jelly powder is dissolving. Then you can add sugar in the mixture. 

After adding the sugar, add ginger power and mix well.
